Citrus hystrix, also known as the kaffir lime or makrut lime, is a citrus fruit native to tropical Southeast Asia. This evergreen shrub can grow up to 4m tall and has glossy, dark green leaves in two parts. Fragrant white flowers, about 2cm across, bloom all year round and are followed by bumpy-skinned limes. Both the leaves and fruit of the kaffir lime tree are widely used in Southeast Asian cuisine. It is best grown in a cool or temperate greenhouse or conservatory, but can also be grown outdoors in USDA zones 9-10. However, it thrives when grown in a pot with adequate drainage and can be placed on a patio or deck. The rind and crushed leaves of the kaffir lime emit an intense citrus fragrance, making it useful in perfumery as well.
